Rich pickings at the River Restaurant

Our executive head chef Dave Ashton has recently revealed details of the celebrational menu he’s created for the chic and sophisticated new surroundings of The River Restaurant here at the five-star Lowry Hotel. Updating traditional dishes with a modern twist, one of his favourites is a classic Wellington, sliced at the table and shared between two (£49).

From 6 November, the team is dishing up a different Wellington every Wednesday, starting with Duck Breast rolled in super-flaky puff pastry with Confit Leg Duxelle, Savoy Cabbage and served with Duck Fat Chips.

Rotating between four versions each week, second up is Pork Fillet Wellington with Sage and Apple Stuffing, Truffled Cauliflower Cheese and Pommery Grain Mustard Mash, then it’s Venison Wellington with 24-hour Braised Shoulder Farce, Caramelised Red Cabbage, and Juniper and Orange Sauce, followed by Chicken Wellington with Wild Mushroom and Truffle Duxelle, Glazed Chicken Wings and Bacon Dauphinoise.
