Six new global fusion dishes twist the flavours of Thailand

SIX new Bangkok Specials have been added to the Manchester and Liverpool Busaba Eathai's menus until April to complement the usual Thai street food classics and authentic Bangkokian comfort food given a fresh twist.

Three Mushroom, Spinach & Smoked Garlic Thai Roti (small plate) (v) £7.25

Oyster, shimeji white mushroom, basil and chilli in a folded char-grilled Thai roti. Roti are the perfect snack for busy metropolitan life on the go; small carts selling filled roti are a common sight in the backstreets of Bangkok. Busaba’s is char-grilled, rustic and spicy, and the sweetness from the roti goes so well with the savoury filling.

Avocado & Asian Hot Mint Super Salad (small plate)(n, gf, v) £6.95

Spring onion, ginger, chilli, coriander, toasted peanuts and sweet chilli lime dressing, with avocado and mint. Inspired by a popular salad from Thailand’s east coast, this salad is given a Bangkok twist by using avocado, which is appearing more and more on menus in the Thai capital thanks to increasing demand for this popular, health-giving superfood.

Wild Black Pepper Venison £15.75

Stir-fried Yorkshire venison with spring onion, red and green chilli, garlic, served with jasmine rice. Busaba have made a classic Thai dish their own , sourcing British wild venison from dedicated deer stalkers in North Yorkshire and adding pickled garlic to the sauce to give a delicious twist to this old-school classic.

Crispy Thai-fry Chicken In A Basket £14.25

Pieces of fried chicken thigh, drumstick and breast marinated in Thai-spices, turmeric and black pepper, and served with sweet potato fries, a refreshing Thai slaw and chilli dipping sauce. Turmeric-marinated fried chicken, made in the style of the south of Thailand and spiced the Isaan way with larb seasoning. Like here, Bangkok’s gone crazy for fried chicken and everyone’s got their own take.

Busaba's prawn, squid & scallop stir-fry (gf) £14.75

A light stir-fry in a green curry paste with chow-chow, galangal, lime leaf and Thai basil, served with jasmine rice. Inspired by one of Bangkok’s most talked-about seafood market restaurants, which runs by the motto ‘if it swims, we have it’. This version has squid, scallops and prawns, and swaps traditionally used red curry paste for green, making it sweeter, spicier and even more fragrant.

Drunken beef flat noodle (n) £13.95

Slow-cooked beef with flat rice noodles. Satisfying with savoury spice, this Chinese-influenced dish with flat rice noodles is made more indulgent with slow-cooked beef that melts in the mouth. Drunken Bangkokians love this kind of comfort food after a night out.
