Graffiti Spirits Group reckon Slims, their sixth indie, will open ‘in a matter of weeks’

AS if they weren’t busy enough, what with last month’s launch of Duke Street Market, Graffiti Spirits Group are already working on opening another Liverpool venue and reckon their newest gaff will be open ‘in a matter of weeks’. Slim’s is the latest from the restaurant-bar indie, filling the Bold Street hole left by Love Thy Neighbour’s shock closure at the start of the year.

The award-winning Graffiti Spirits Group - who is behind many of the city’s most popular hangouts - is currently transforming the venue in keeping with its five existing city-centre outlets, including Ropewalks ‘cocktail emporium’ Santa Chupitos and nearby basement tequileria El Bandito – so expect plenty of exposed brickwork and galvanised features.

Downstairs, screens will be showing live sports games, while upstairs Slim’s is apparently inspired by high-end New York diners, with laid-back surroundings and a choice of good-quality comfort food. A varied menu promises plenty for the vegetarian and vegan alongside American-style burgers and roasts served in metal trays.

Commenting on the new venue, Graffiti Spirits Group co-founder (with John Ennis) Matt Farrell says: ‘We couldn’t be happier that Slim’s will be opening on Bold Street, which is famous for being a hub of independent, unique restaurant and bars. It will be the perfect addition with an impressive menu that will cater for all tastes.

‘We’ve given the menu for Slim’s a lot of thought and taken elements from projects that we have previously learnt from. The restaurant’s offering will have something for everyone including delicious burgers, both meat and vegan, and our renowned roast dinners.’
